Fermented Foods

The first hybrid Short Term Mobility (STM), organised by the University of Valencia for students from the FORTHEM Alliance countries, has been successfully completed.

The Summer School on Fermented foods: quality, safety, and sustainability, which took place at the Faculty of Pharmacy, offered the 20 participating students the opportunity to share experiences through different workshops, lectures and visits organised and supervised by Ana Juan-García, José Vicente Ros and Amparo Gamero, professors at the University of Valencia. The event, which lasted 5 days, helped to introduce students to the major advances in fermented food research from three main areas: Food Technology, Toxicology and Inorganic Chemistry, all of them related to the Sustainable Development Goals (SDGs) proposed by the UN in the 2030 Agenda. Throughout the week, presentations and workshops were organised around different topics such as: quality, safety, sustainability, intellectual property, transfer of results, SDGs, etc., all focused on food, especially fermented food. To this purpose, various companies and organisations collaborated, such as the OTRI (Office for the Transfer of Research Results of the University of Valencia), the Polytechnic University of Valencia, the Complutense University of Madrid, the Institute of Agrochemistry and Food Technology of the CSIC (IATA-CSIC), the CEMAS (Valencia World Centre for Sustainable Urban Food of the Valencia City Council) and the wine company Bodegas Arráez. The students have actively participated creating their own project, relating it to the selected SDGs and exposing it to their classmates; the one with the highest score has been selected as the winning project. They also enjoyed organised visits to the Institute of Agrochemistry and Food Technology of the CSIC (IATA-CSIC), the city centre and the City of Arts and Sciences. During the Summer School on Fermented foods, the active collaboration of students, cooperation and the creation of networks of students from different European countries have been promoted in both the academic and social spheres, giving them a closer look at Spanish culture and, above all, the regional particularities of Valencia. The event has been enthusiastically received by the students who have participated in this project of the FORTHEM Alliance as well as by the collaborating organisations and companies.
